There are several approaches for segmenting images based on similarity and discontinuity of pixel values. Some of which are: Histogram based, Neural Network based, Support Vector Machines based, and Clustering based methods. Pal & Pal \cite{pal1993review} wrote a detailed review on various image segmentation techniques including the ones mentioned above.
