\section{\textbf{Gluten:}}  Gluten is a protein with a unique structure and “binding” quality which allows us to use this in cooking and baking. It additionally helps many of the foods we eat - such as bread - to keep its shape and elasticity. One of gluten proteins, the HMM subunits of glutenin assist in the elasticity of gluten as the bonds between these subunits - a form of a peptide bond are extremely resistant to hydration. Additionally, gluten can be, in laymen terms, extracted through the thorough washing of dough underwater as gluten is in soluble.
